Start Your Superbowl Party Off With These Potato Nachos.

Good Monday night everyone! Hope you enjoyed your weekend, I did. We were hoping to go snowboarding on Saturday, but it was 7 degrees. Cold. It's supposed to be 30 degrees next weekend, I am really looking forward to warmer weather.

These little potato nachos are so good. Topped with ranch salad dressing mix, pepper jack cheese, & cheddar cheese makes you keep reaching for another one. I didn't cook the potatoes fully so they had a little crunch to them, which made them taste better. My Dad and brother loved these, so I'm sure all your football guys would.



Potato Nachos
Ingredients:
8 medium red potatoes
1 envelope ranch salad dressing mix
1 block of Pepper Jack Cheese
2 cups (8 ounces) shredded cheddar cheese
2 cups (16 ounces) sour cream
6 to 8 green onions, chopped
Salt, to taste
DIRECTIONS:
Place potatoes in a saucepan and cover with water. Bring to a boil. Reduce heat; cover and cook for 15-20 minutes or just until tender. Drain; cool slightly. Cut potatoes into 1/4-in.-thick slices. Place in a single layer in three greased 15-in. x 10-in. x 1-in. baking pans. Top each with salad dressing mix, pepper jack slice, & cheddar cheese. Bake, uncovered, at 350° for 8 minutes or until cheese is melted. Top with sour cream and green onions. Sprinkle with salt. Yield: 12 servings.

Knotts Berry Farm again. Last time I mentioned Knotts, some of my readers were saying they knew about it and needed to get down there. When I think of California I think of Knotts. And I love their free fall Supreme Scream.

  6. You are brave! lol I went to Knotts quite a few yrs ago and rode that exact ride and man did I get sick. I passed out as soon as I stepped foot on the ground. Glad you had fun though!!

    You're food always looks sooo yummy!!
