Sugar Cookie Mix Banana Bread.

Happy Friday everyone! It is a beautiful summer day and I am looking forward to heading out with my family for dinner and to the theater. So this is going to be a quick post.

We had some very ripe bananas on the counter that needed to be used up so I took my banana recipe and tweaked it. Instead of adding a chocolate cake mix I added a sugar cookie mix and some milk. Yum, the sugar cookie mix adds a wonderful flavor. This makes lots of batter so I would suggest not pouring it all into the 13x9 inch pan. Maybe make some cupcakes with the rest. I made the mistake of using all the batter in the pan and it takes forever to bake and turns overcooked slighty.

Sugar Cookie Mix Banana Bread
Ingredients:
1 cup butter
1 cup sugar
3 eggs
1 1/2 cups flour
1/4 tsp. salt
3/4 tsp. baking soda
3/4 tsp. vanilla
3 medium bananas, ripe and smashed
5 tbsp. sour cream
1 (17.5 oz) sugar cookie mix
DIRECTIONS:
Preheat oven to 350 degrees. Grease a 9x13 in pan (and a muffin pan). Cream butter and sugar together. Add eggs and mix well. Combine flour, baking soda, and salt together and add to creamed mixture. Add vanilla, bananas, sour cream, and cookie mix. Mix very well. Pour into greased baking pan and muffin tin. Bake for 45 minutes or until ready.

Graduation party date has been set. Invitations have been mailed. Decorations, food, and all the fun stuff is coming now. Choices.

This is the picture we used for the invitations....maybe it is just me but I do not really care for this picture of myself. But since the world doesn't revolve around me (what?!) I didn't say anything. And knowing myself, I always critque pictures of people way too much...so ignore me.

Enjoy a beautiful weekend! Busy weekend ahead, picture time for us 6 kids and my Senior Pics tomorrow! See you with some more yummy food soon!

Good Thursday everyone! Hope you are having a wonderful week with sunny weather. I cannot wait to see Hannah Montana this weekend, I wasn't able to make it last week with my friend for opening week to see it. We can't wait to see it Saturday. My favorite characters would have to be Lilly, Ricco, Jackson, and Hannah. Ricco is so amusing.

I needed to use some bananas up we had and came up with this recipe. I love the addition of a chocolate cake mix. The sour cream and bananas add much moisture to this cake and the chocolate chunks or chips knock this cake up a notch. This was devoured instantly but with 3 man eating brothers I honestly think devouring anything isn't hard.

I love my friends. But you all know that.

Katie and I are the last two to graduate from high school out of our friend's group. We both leave 12th grade next month. While it sounds exciting to no longer be in high school, it is also scary for me. I am stepping into a place I have never been before. My whole life I have always been in either elementary, junior high, or high school. But I know I have a great big God who will walk with me as I tread these new days. And I have to graduate sometime, I wouldn't want to be 40 and still in 12th grade.

(Easter 2009)

One of my favorite songs by Third Day. I find it simply amazing that the God who holds this world in the palm of His Hands and created this universe, loves me. And died that I might live.

Brownies, Puddings, & Bananas!

I found this recipe off of flickr and knew I had to make it. The only thing I'd change here is use 2 chocolate pudding mixes instead of 1 banana mix and 1 chocolate mix. The banana taste wasn't very good in this at all. I might take the bananas out too next time. But, other than that - it was yummy! Another reason to get those parfait glasses if you don't have 'em!

"Easy Brownie Pudding"
1 box (small) banana cream pudding
1 box (small) chocolate pudding
4 cups cold milk (2 cups for each box)
4 bananas (peeled & sliced)
1 box of brownie mix
Instructions:
In a medium size-mixing bowl add the pudding powder from both boxes. Mix together all 4 cups of milk according to the instructions on the box with either a wire whisk or hand mixer. Once pudding has come to the right consistency set aside to prepare the banana and brownies.Using a cutting board or what ever you fill comfortable using. Peel and cut each banana into slices approx. 1/2 in or so and set aside. Also cut each brownie into small bite size chunks. In a medium serving bowl add a layer of the pudding mixture to the bottom of the bowl alternating pudding, bananas, and brownies. Chill or eat right away.

Want One??

You are probably thinking what in the world is the big deal about a sandwich? Trust me, it isn't any kind of sandwich. A sandwich contains (my style) sliced turkey from the deli, plenty of mayo, a bit of mustard, provalone cheese, & lettuce. Simply put, this sandwich doesn't contain any of that. No, this has, really ready?? Peanut butter, bananas, marshmallows, and reese cups. Combine that and then grill it on the stove. What could possibly be better?? Oh yeah, I might add putting all this on two slices of "big" Texas Toast. Yum!
See that?? Who could resist?
"Reeselicious Banana Sandwich" (a big thanks to Jenny for another yummy recipe)

2 slices whole grain bread (I used Texas Toast)
¼ Cup creamy peanut butter (I used Reese peaunut butter)
½ banana, cut into thin slices
24-30 mini marshmallows
1 Reeses Peanut Butter Cup, normal size (I used about 4 minuature Reese)
2 Tablespoons soft butter
Powdered sugar to sprinkle on top
1. Spread peanut butter onto both sides of bread. Lay banana slices over one piece of bread and marshmallows over the other piece, pressing down gently. Break apart the Peanut Butter cup and evenly place in between marshmallows. Carefully lay the bread with banana over the marshmallow side and press gently. Spread butter onto both sides of bread and cook both sides in a medium skillet over medium low heat until golden brown and marshmallows are warm and slightly melted.
2. Let cool for 5-7 minutes before slicing. Sprinkle both sides with powdered sugar and serve warm.

My cutie-pie little brother, who waited so patiently for me to make these.
BTW, could any of you guys recommend some cooking/baking books that you love - I am in search of some! Thanks!~
