Banana Bread Made W/A Chocolate Cake Mix

Good Thursday everyone! Hope you are having a wonderful week with sunny weather. I cannot wait to see Hannah Montana this weekend, I wasn't able to make it last week with my friend for opening week to see it. We can't wait to see it Saturday. My favorite characters would have to be Lilly, Ricco, Jackson, and Hannah. Ricco is so amusing.

I needed to use some bananas up we had and came up with this recipe. I love the addition of a chocolate cake mix. The sour cream and bananas add much moisture to this cake and the chocolate chunks or chips knock this cake up a notch. This was devoured instantly but with 3 man eating brothers I honestly think devouring anything isn't hard.

Chocolate Cake Mix Banana Bread
Ingredients:
1 cup butter
1 cup sugar
3 eggs
1 1/2 cups flour
1/4 tsp. salt
3/4 tsp. baking soda
3/4 tsp. vanilla
3 medium bananas, ripe and smashed
5 tbsp. sour cream
2 cups of a chocolate cake mix, straight out of the box
1 1/2 cups chocolate chunks or chips
DIRECTIONS:
Preheat oven to 350 degrees. Grease a 9x13 in pan. Cream butter and sugar together. Add eggs and mix well. Combine flour, baking soda, and salt together and add to creamed mixture. Add vanilla, bananas, sour cream, cake mix, and chunks/chips. Mix very well. Pour into greased baking pan. Bake for 45-50 minutes or until ready.

I love my friends. But you all know that.

Katie and I are the last two to graduate from high school out of our friend's group. We both leave 12th grade next month. While it sounds exciting to no longer be in high school, it is also scary for me. I am stepping into a place I have never been before. My whole life I have always been in either elementary, junior high, or high school. But I know I have a great big God who will walk with me as I tread these new days. And I have to graduate sometime, I wouldn't want to be 40 and still in 12th grade.

Ooey Gooey Cookies, That Are Made Easy!

Already Tuesday? How did that happen so quick? I remember posting on Saturday....that went by fast! Anyway, it is getting colder over here every day - this morning it was 20 degrees. Uh, yeah, that's cold. Very cold. It was snowing a couple days ago too, but that's all gone now. I can't believe it is almost winter. I can't wait for it to get colder so I can go snowboarding with my brothers, that is the highlight of my winter every year. Don't worry, there will be some pictures of us snowboarding on here in a couple months.
Here are some cookies that are so soft and gooey in the middle - yummy! The sprinkled powdered sugar on top makes them look so pretty.


"Gooey Butter Cookies"


1 8oz. pkg. cream cheese
1/2 c. butter, softened
1 egg
1/4 tsp. vanilla
1 yellow cake mix
1/2 c. powdered sugar
DIRECTIONS:
Preheat oven to 350 degrees. In a medium bowl, cream together the cream cheese and butter. Stir in egg and vanilla. Add cake mix & stir until well blended. Powder sugar your hands well. Roll balls into 1" or 2" and roll balls thoroughly in powdered sugar. Place 1" apart on ungreased cookie sheets. Bake for 10 minutes. Leave on cookie sheet for 3 minutes or more before removing to cool on wire rakcs.

#5 & And Nieman Bars!

I find it amazing that my family and I can eat so many desserts in such short periods of time. If the dessert is really good - it will be gone in a couple hours. But, there are "8" of us to eat it all. And, we of course eat healthy & delicious meals to balance it all off. I absolutely love a good meal along with a delicious dessert. Doesn't everyone?!

"Jeweled Coconut Drops"

Ingredients:
1/3 cup butter, softened
1 package (3 ounces) cream cheese, softened
3/4 cup sugar
1 egg yolk
2 teaspoons orange juice
1 teaspoon almond extract
1-1/4 cups all-purpose flour
1-1/2 teaspoons baking powder
1/4 teaspoon salt
3-3/4 cups flaked coconut, divided
1 cup seedless raspberry preserves, warmed

DIRECTIONS:
In a large mixing bowl, cream the butter, cream cheese and sugar. Beat in egg yolk, orange juice and almond extract. Combine the flour, baking powder and salt; gradually add to creamed mixture. Stir in 3 cups of coconut. Refrigerate for 30 minutes or until easy to handle. Shape dough into 2-in. balls; roll in remaining coconut. Place 2 in. apart on ungreased baking sheets. Using the end of a wooden spoon handle, make an indentation in the center of each ball. Bake at 350° for 8-10 minutes or until lightly browned. Remove to wire racks to cool. Fill each cookie with preserves. Yield: about 3-1/2 dozen.

Ingredients:
1 box of yellow cake mix
1 small box of instant vanilla pudding
1 egg
1 cup chopped nuts (optional)
1/2 cup melted butter
-----------------------------------------------------
2 eggs
8 oz. package of cream cheese
1 lb. or powered sugar
DIRECTIONS:
Mix together top five ingredients and press into ungreased 10 X 15 pan.
Mix together last three ingredients and spread evenly over mixture in pan
Bake at 350 for 35 minutes.
