BBQ Chicken Quesidallias At #2.

Good Tuesday everyone! Sorry for being such a slacker these past few days. I would have posted yesterday, but, I was down all day with food poisoning after eating at McDonalds. I won't be eating there anytime soon! I am glad to say I am feeling 100% fine now, thanks be to God. One bonus to being sick is getting out of school. But, being well is still much better.

These quesidallias at #2 are so amazingly delicious. The bbq sauce mixed with the meat adds to the flavor in a way that brings this quesidallia out in a whole new way. Everyone here couldn't get enough. Quesidallias at a whole new level.

Barbecued Chicken Quesadillas

Ingredients:
1 tablespoon butter, softened
2 flour tortillas (8 inches)
3/4 cup shredded cheddar-Monterey Jack cheese
1 cup chopped cooked chicken breast (I used canned chicken breasts from Sams, the chicken you would normally use for chicken sandwiches)
1/3 cup barbecue sauce
DIRECTIONS:
Spread butter over one side of each tortilla. Place tortilla, buttered side down, on griddle. Sprinkle one side of each tortilla with 3 tablespoons cheese. Combine chicken and barbecue sauce; spoon over cheese. Sprinkle with remaining cheese. Fold over and cook over low heat for 1-2 minutes on each side or until cheese is melted. Cut into wedges. Yield: 2 servings.
