Good Sunday everyone! Hope your weekend has been treating you well. I am not exactly looking forward to tomorow....Monday. Going back to school after the weekend is always hard. But, oh well - that's part of my life.

Here is a delicious way to make chicken salad with apples, pecans, celery, buttermilk, and other ingredients. The apples and celery add that crunchiness when you take a bite and the buttermilk puts a new spin to chicken salad. This would make one delicious and easy meal.
Pecan Chicken Salad
Ingredients:
2-1/2 cups canned chicken (the chicken you would buy for chicken salad)
1/3 cup chopped celery
1/3 cup chopped tart apple
1/3 cup chopped pecans, toasted
1/2 cup mayonnaise
4 teaspoons buttermilk
1/2 teaspoon salt
1/8 teaspoon pepper
7 croissants, split

1/3 cup chopped tart apple
1/3 cup chopped pecans, toasted
1/2 cup mayonnaise
4 teaspoons buttermilk
1/2 teaspoon salt

DIRECTIONS:
In a large bowl, combine the chicken, cherries, celery, apple and pecans. In another bowl, combine the mayonnaise, buttermilk, salt and pepper; add to chicken mixture and mix well. Spoon 1/2 cup chicken salad onto each croissant. Yield: 7 servings.

See this picture? That's me on the left and my friend Joss on the right. Uh, the year was 1997, so we were both 6. Fast forward a couple years and now we are both Seniors in high school. These are Joss's Senior pictures....I still need to get mine done. It's hard to believe that we are both in our last year of high school....but exciting too because we are graduating. We are both excited to see what God holds for our future as we take a new step in life.
