More Superbowl Recipes And The POM Winners.

Happy Thursday everyone! I can't believe it is almost the weekend again; this week went by too fast. I am looking forward to tomorrow night because I get to see "New In Town". Hopefully it will be a good one.

Okay, onto the winners. Yes, there is going to be 2 winners, not only one. This was one of my favorite giveaways, why? I saw tons of CUBS fans! I feel sorry for those who like the St. Louis Cardinals or the Brewers. Kidding. I saw too many Red Sox and Yankee fans....eek!
Here are the winners:

Tempura Chicken Wings

3 lbs. of chicken wings, pre cut(I get mine from Walmart or Sams)
1 cup cornstarch
3 eggs, lightly beaten
Oil for deep-fat frying
1/2 cup sugar
1/2 cup white vinegar
1/2 cup currant jelly
1/4 cup soy sauce
3 tablespoons ketchup

Place cornstarch in a large resealable plastic bag; add chicken wings, a few at a time, and shake to coat evenly. Dip wings in eggs. In an electric skillet or deep-fat fryer, heat oil to 250°. Fry wings for 5 minutes or until light golden brown and juices run clear, turning occasionally. Drain on paper towels. In a small saucepan, combine the sugar, vinegar, jelly, soy sauce, ketchup and lemon juice. Bring to a boil. Reduce heat; simmer, uncovered, for 10 minutes. Place chicken wings in a greased 15-in. x 10-in. x 1-in. baking pan. Pour half of the sauce over wings. Bake, uncovered, at 350° for 15 minutes. Turn wings; top with remaining sauce. Bake 10-15 minutes longer or until chicken juices run clear and coating is set. Yield: 2-1/2 dozen.

Start Your Superbowl Party Off With These Potato Nachos.

**Some of my POM winners haven't e-mailed me yet, please scroll down to the next post for more info and see if you're one of the winners**

Good Monday night everyone! Hope you enjoyed your weekend, I did. We were hoping to go snowboarding on Saturday, but it was 7 degrees. Cold. It's supposed to be 30 degrees next weekend, I am really looking forward to warmer weather.

These little potato nachos are so good. Topped with ranch salad dressing mix, pepper jack cheese, & cheddar cheese makes you keep reaching for another one. I didn't cook the potatoes fully so they had a little crunch to them, which made them taste better. My Dad and brother loved these, so I'm sure all your football guys would.

Potato Nachos
Ingredients:
8 medium red potatoes
1 envelope ranch salad dressing mix
1 block of Pepper Jack Cheese
2 cups (8 ounces) shredded cheddar cheese
2 cups (16 ounces) sour cream
6 to 8 green onions, chopped
Salt, to taste
DIRECTIONS:
Place potatoes in a saucepan and cover with water. Bring to a boil. Reduce heat; cover and cook for 15-20 minutes or just until tender. Drain; cool slightly. Cut potatoes into 1/4-in.-thick slices. Place in a single layer in three greased 15-in. x 10-in. x 1-in. baking pans. Top each with salad dressing mix, pepper jack slice, & cheddar cheese. Bake, uncovered, at 350° for 8 minutes or until cheese is melted. Top with sour cream and green onions. Sprinkle with salt. Yield: 12 servings.

Knotts Berry Farm again. Last time I mentioned Knotts, some of my readers were saying they knew about it and needed to get down there. When I think of California I think of Knotts. And I love their free fall Supreme Scream.

I'll see you next with our favorite wing recipe, have a great week!

Onto some food. These little appetizers are so delicious and they take very little time to prepare. Cooking takes the longest but these are worth it. The brown sugar mixed in with these adds a sweet flavor to it. My brothers were gobbling these right up, so I know these would be a hit at any Superbowl party.

Sausage Bacon Bites
Ingredients:
3/4 pound sliced bacon
2 packages (8 ounces each) brown-and-serve sausage links
1 cup plus extra packed brown sugar, divided
DIRECTIONS:
Cut bacon strips widthwise in half; cut sausage links in half. Wrap a piece of bacon around each piece of sausage. Place 1 cup brown sugar in a shallow bowl; roll sausages in sugar. Secure each with a toothpick. Place in a foil-lined 15-in. x 10-in. x 1-in. baking pan. Cover and refrigerate for 4 hours or overnight. Sprinkle with brown sugar. Bake at 350° for 35-40 minutes or until bacon is crisp. Sprinkle with remaining brown sugar. Yield: about 3-1/2 dozen.---------------------------------------

When I was trying to decide which family pictures to post, I realized that you guys haven't seen a picture of my Mom yet. Not sure how that happened. So, here is my Mom with her sister, or my Aunt Kathy. I personally think my Mom and Aunt look very much alike. Out of us three girls, my older sister Lisa is always the one told she looks like our Mom. And, I agree. The 2nd picture is of Lisa and then me. No pictures of Anna because she politely asked me not to post any.

Enjoy the rest of your weekend and I'll be back with more Superbowl recipes!

Sassy Cinnamon Cookies

Good Monday morning everyone! Hope you had an enjoyable weekend. I am excited that I have no school today...I love 3 days off of school. Friday we went and saw Mall Cop, funny movie. I'd love to have a segway like Paul Blart does - that would be so fun. The best part of the movie was the last 45 minutes, won't say anything else so I don't spoil it for you guys.

I made these cookies over the weekend and mm, they are so good. Rolling the dough in cinnamon sugar makes these taste much better. I know some of you guys are having trouble finding cinnamon chips - I was able to find mine at HyVee. They harden quickly, so you'll want to keep them in an air-tight container or in foil.

Sassy Cinnamon Cookies
Ingredients:
1/2 cup butter or margarine, softened
1 1/2 cups sugar
1 teaspoon vanilla
2 eggs
2 1/2 cups all-purpose flour
1 teaspoon cream of tartar
1/2 teaspoon baking soda
1/4 teaspoon salt
1 cup cinnamon-flavored baking chips
2 tablespoons sugar
1 teaspoon ground cinnamon
DIRECTIONS:
Heat oven to 375°F (if using dark or nonstick pan, heat oven to 350°F). In large bowl, beat 1 1/2 cups sugar, the butter, vanilla and eggs with electric mixer on medium speed, or mix with spoon, until creamy. Stir in flour, cream of tartar, baking soda and salt. Stir in cinnamon chips and pecans. In small bowl, mix 2 tablespoons sugar and the cinnamon. Shape dough into balls. Roll in sugar-cinnamon mixture. Place balls 3 inches apart on ungreased large cookie sheet (do not flatten). Bake 10 minutes or until set and light brown. Immediately remove from cookie sheet to wire rack. *To keep from hardening store in air-tight container*

This picture was taken in 2003, my little brother and sister were only 6 and 8. Back then they were so photogenic, now it's "get that camera away from me"! I may be prejudice but they were awfully cute back then.
The last two pictures were when we used to raise animals. We used to have goats, goats kids, calves, and steer. We had tons of fun naming all the animals; we came up with intersting names.

Have a great week and I'll see you with a giveaway for my 100th post!

Conclusion of The Top Ten And Knotts.

Happy Thursday everyone! Hope your week has gone well so far, only one more day until the weekend. We are trying to stay warm over here. Yesterday and today the temperature has been below zero, yes...you read that right. Below zero. Stepping outside makes your whole body go into a state of shock and it can get hard to breathe. It doesn't help that one of my friends is enjoying 86 degree weather in California and in shorts! 20 degrees above zero sounds warm right now. This weekend it is supposed to get warmer...but definitely not 86 degrees. (Joss ship some of that weather over here)!

The #1 appetizer at our house. Whenever it is made it doesn't stay long at all - especially since it is mixed with tomatoes, cilantro, onions, & green chilies. It will taste much better the longer you marinate it and bright red tomatoes are a must. This pairs perfectly with Mexican food. Hope you've all enjoyed my Top Ten Appetizer countdown, hope you try some of our favorite appetizers!

Texas Salsa
Ingredients:
2 large red tomotaos, chopped
1 cup chopped onion
2 (4-oz.) cans chopped green chilis
3/4 cup fresh cilantro, chopped
2 tsp. garlic, minced
1 tsp. salt
DIRECTIONS:
Combine all ingredients together. Marinate for 1-2 hours before serving. Serve with tortilla chips.

Most of you guys on the west coast have probably heard of Knott's Berry Farm. Every time we take a trip out to California we always make sure to spend a day there. It is one of my favorite amusement parks and a day there is so enjoyable. One of my favorite rides there used to be Ghost Rider. After riding that ride last July, it is no longer a favorite. It is no longer a favorite because Ghost Rider is now extremely bumpy. Made you feel like your insides were going to come out. These pictures (the one below wasn't taken by me), are all at Knotts.

I'll see you next with some yummy desserts; have a great weekend!
