"Coconut Snowball Cupcakes". I know the title isn't exactly welcoming spring...but hence the name - they look springy to me!

creamy lemon filling....

The neat thing about these cupcakes is you don't have to frost them just right, because the coconut dusting takes care of that!

Is this recipe a keeper?? Since my Dad and brother liked them...that would be a
