Welcoming Spring With,....

"Coconut Snowball Cupcakes". I know the title isn't exactly welcoming spring...but hence the name - they look springy to me!

An ever delicious creamy lemon filling....
The neat thing about these cupcakes is you don't have to frost them just right, because the coconut dusting takes care of that!
Is this recipe a keeper?? Since my Dad and brother liked them...that would be a yes!

Pretty cupcakes! I love the curly coconut on top.
Actually, 'snowball' is appropriate for the weather here right now - it's snowing! so weird.
