Sassy Cinnamon Cookies

Good Monday morning everyone! Hope you had an enjoyable weekend. I am excited that I have no school today...I love 3 days off of school. Friday we went and saw Mall Cop, funny movie. I'd love to have a segway like Paul Blart does - that would be so fun. The best part of the movie was the last 45 minutes, won't say anything else so I don't spoil it for you guys.

I made these cookies over the weekend and mm, they are so good. Rolling the dough in cinnamon sugar makes these taste much better. I know some of you guys are having trouble finding cinnamon chips - I was able to find mine at HyVee. They harden quickly, so you'll want to keep them in an air-tight container or in foil.

Sassy Cinnamon Cookies
Ingredients:
1/2 cup butter or margarine, softened
1 1/2 cups sugar
1 teaspoon vanilla
2 eggs
2 1/2 cups all-purpose flour
1 teaspoon cream of tartar
1/2 teaspoon baking soda
1/4 teaspoon salt
1 cup cinnamon-flavored baking chips
2 tablespoons sugar
1 teaspoon ground cinnamon
DIRECTIONS:
Heat oven to 375°F (if using dark or nonstick pan, heat oven to 350°F). In large bowl, beat 1 1/2 cups sugar, the butter, vanilla and eggs with electric mixer on medium speed, or mix with spoon, until creamy. Stir in flour, cream of tartar, baking soda and salt. Stir in cinnamon chips and pecans. In small bowl, mix 2 tablespoons sugar and the cinnamon. Shape dough into balls. Roll in sugar-cinnamon mixture. Place balls 3 inches apart on ungreased large cookie sheet (do not flatten). Bake 10 minutes or until set and light brown. Immediately remove from cookie sheet to wire rack. *To keep from hardening store in air-tight container*

This picture was taken in 2003, my little brother and sister were only 6 and 8. Back then they were so photogenic, now it's "get that camera away from me"! I may be prejudice but they were awfully cute back then.
The last two pictures were when we used to raise animals. We used to have goats, goats kids, calves, and steer. We had tons of fun naming all the animals; we came up with intersting names.

Have a great week and I'll see you with a giveaway for my 100th post!

I was thinking the same thing as Rebekah! I love snickerdoodles...which is rare since I love chocolate so much. But these are a must-I just saw cinnamon chips the other day at the grocery store.

Oh, its a good thing your so far away from me and I can't reach your cookies! LOL. Denying myself is not fun!

I L-O-V-E HyVee!! I wish we had grocery stores like them here!

Speaking of mall cop - I had never seen one in my life until I went to the downtown mall in Indianapolis while visiting my brother. I saw this guy whiz by on a motorized unit and I was like WHAT was that? lol. I live in the boonies where the mall cops walk on foot. ;)

We've tried finding cinnamon chips too around LA, but it must be a specialty store thing. Gotta keep looking because your cookies are a must make!

I like the name of your cookies. I'll bet they taste just as good as they look!

I do remember Hy-Vee when I lived in Iowa and Minnesota. It's a great store. However, I haven't seen one since. Must be a Midwest thing!

I would love to have one of these cookies right now and I am one of the people that can't find cinnamon chips. When I do find them you can bet I am making these cookies!

I want to make these tonight...but I live in an area with a monopolized grocery store chain that doesn't carry cinnamon chips...any other suggestions? maybe butterscotch? I'm not sure what would be good...

We saw the movie over the weekend too, I really liked it. I love the name of your cookies!

MissGreenTea - my best bet for substiuting cinnamon chips would probably be butterscotch or maybe peanut butter chips? I did a google search for subsituting cinnamon chips, but not much came up. Some mentioned cinnamon, not sure how that would taste though. King Arthur Flour has some you can purchase online: http://kidscooking.about.com/gi/dynamic/offsite.htm?zi=1/XJ&sdn=kidscooking&cdn=food&tm=7&gps=420_117_1020_615&f=10&su=p284.9.336.ip_&tt=28&bt=0&bts=0&zu=http%3A//www.kingarthurflour.com/shop/landing.jsp%3Fgo%3DHome.

Here is another link for non-mini cinn. chips: http://www.preparedpantry.com/gourmet-cinnamon-chips.aspx.
Sorry for the long reply..hope this helped!
