...give this a try. This is the exact same recipe but you bake it as a loaf instead of muffins. When I make it next time I am going to add more sugar and add more than one cup of whatever fruit I use. Oh, yes - and bake it less. 40 minutes of baking was too much for these loaves. But overall, it was a yummy dessert. Perfect for an early afternoon snack.
"Moist Streusel Bread"
3 cups flour
1 cup sugar
3 teaspoon baking powder
1 teaspoon salt
1 3/4 cup milk
2 eggs
1 cup melted butter (or 1 cup of oil)
1 cup diced mangoes
1 cup sugar

Streusel Topping:
1/3 cup sugar
1/4 cup flour
2 tablespoons butter or margarine
DIRECTIONS:
Preheat oven to 400F. Grease & flour loaf pans. In large bowl, sift flour, sugar, baking powder, and salt. Stir in milk, eggs, and butter. Mix until flour is just incorporated. Do not overbeat. Gently stir in mangoes. Pour half the batter into each pan.
For topping, combine sugar and flour. Cut in butter until mixture resembles course crumbs; sprinkle half over each loaf. Bake for 40 minutes.

Well Priscilla, you know I made those blueberry muffins, they're soooo good!! ;-) This is a wonderful adaptation with the mangos, and a loaf too!!
Ooooh my word!! Just here thinking of the variations, raspberries, strawberries, chocolate, nuts, etc... and any combination will do me just fine ;-)
