More Superbowl Recipes And The POM Winners.

Happy Thursday everyone! I can't believe it is almost the weekend again; this week went by too fast. I am looking forward to tomorrow night because I get to see "New In Town". Hopefully it will be a good one.

Okay, onto the winners. Yes, there is going to be 2 winners, not only one. This was one of my favorite giveaways, why? I saw tons of CUBS fans! I feel sorry for those who like the St. Louis Cardinals or the Brewers. Kidding. I saw too many Red Sox and Yankee fans....eek!

Hope you enjoy the rest of these Superbowl recipes. These wings are insanely delicious and the chocolate chunk cookies will satisfy that chocolate craving.

Tempura Chicken Wings
Ingredients:
3 lbs. of chicken wings, pre cut(I get mine from Walmart or Sams)
1 cup cornstarch
3 eggs, lightly beaten
Oil for deep-fat frying
1/2 cup sugar
1/2 cup white vinegar
1/2 cup currant jelly
1/4 cup soy sauce
3 tablespoons ketchup
2 tablespoons lemon juice
DIRECTIONS:
Place cornstarch in a large resealable plastic bag; add chicken wings, a few at a time, and shake to coat evenly. Dip wings in eggs. In an electric skillet or deep-fat fryer, heat oil to 250°. Fry wings for 5 minutes or until light golden brown and juices run clear, turning occasionally. Drain on paper towels. In a small saucepan, combine the sugar, vinegar, jelly, soy sauce, ketchup and lemon juice. Bring to a boil. Reduce heat; simmer, uncovered, for 10 minutes. Place chicken wings in a greased 15-in. x 10-in. x 1-in. baking pan. Pour half of the sauce over wings. Bake, uncovered, at 350° for 15 minutes. Turn wings; top with remaining sauce. Bake 10-15 minutes longer or until chicken juices run clear and coating is set. Yield: 2-1/2 dozen.

Double Chocolate Chunk Cookies
2 cups all-purpose flour
3/4 cup Baking Cocoa
1 teaspoon baking soda
1/2 teaspoon salt
1 cup butter or margarine, softened
2/3 cup sugar
2/3 cup packed brown sugar
1 teaspoon vanilla extract
2 eggs
1 pkg. Semi-Sweet Chocolate Chunks
DIRECTIONS:
Preheat oven to 350 degrees F. Combine flour, cocoa, baking soda and salt in a medium bowl. Beat butter, sugar, brown sugar and vanilla extract in a large mixing bowl until creamy. Beat in eggs. Gradually beat in flour mixture. Stir in chunks. Drop by rounded tablespoon onto ungreased baking sheets. BAKE for 9 to 11 minutes or until cookies are puffed and centers are set but still soft. Cool on baking sheets for 2 minutes; remove to wire racks to cool completely.

Now this would be an interesting survey: who prefers chocolate chips verses chocolate chunks. I myself am a chunk girl- especially in whole wheat chocolate chip/chunk cookies. I can't wait to try double chocolate goodness!
