Summer Is Here!

Wanna bite, anyone??

Levain Giant Chocolate Chip Cookie Copycats

8 ounces (two sticks) unsalted butter, room temp

3/4 cup granulated sugar

3/4 cup brown sugar

2 eggs, beaten

3 cups BREAD flour (13 1/2 oz)

3/4 teaspoon salt

1 teaspoon baking soda

1 1/3 cups semi-sweet chocolate chips

1 to 1 1/3 cups coarsely chopped, untoasted walnuts
Preheat oven to 350 degrees F.
Beat butter and both sugars just until they come together. Don’t overbeat. Add the egg and beat just until incorporated. Mix together the flour, salt and baking soda. When thoroughly mixed, add to batter and stir just until blended. Stir in chocolate chips and nuts. The dough should be neither sticky nor dry.
Divide dough into about 12 mounds, but keep the mounds kind of raggedy. That is, don’t smash them into compact balls. Bake on ungreased insulated cookie sheet or an upside down rimmed cookie sheet for 20 minutes at 350. Cool on sheet for about 10 minutes then transfer to a wire rack to cool.

My Mom asked me to bake some cupcakes since today is "offically" our last day of school, this is what I came up with. But, I do have some school to finish up.

This definately did not turn out the way it should have, the filling under the cool whip, never set right. Argh.
This is a cake I made for my Mom on Mother's Day.
I made this for Memorial Day.
Lewis seriously does not like me taking pictures of him, I have no idea why!

When he is in trouble he gives me this look, melts your anger away!
I have a guitar recital on Sunday, I know what I will be doing this weekend- practice, practice, practice!

Ruth - I liked the cakes too. The flag cake was a white cake with a coconut filling and the top cake was chocolate. The cake for my Mom was a white cake. My dog isn't too scared of my guitar!

OhioMom - I don't think they would be all in one piece when they arrived. :) I didn't even think of using my camera for an audio...but I was so nervous while playing it didn't sound very good!

Wow, not only do you have a bright future as a pastry chef, but one as a photographer too! You're one talented gal!

Okay, so I do have one brownie recipe that is my stand-by and I think they are pretty fudgey. They are called Heaven and Hell Brownies . They have 2 lbs of various different types of chocolate and only a cup of flour. They can be made with or without nuts too.

As for the Tiramisu, I have made this Tiramisu Layer Cake recipe twice (but never posted it) and it is always a hit. I liked this recipe because it uses a box mix (lady fingers get expensive!) and the alcohol is kept to a minimum. When I made it though, I made the cakes in a 13x9 pan, instead of a round one, so that I could feed more people. It still came out really good.

Those chocolate chip cookies you've made are quite yummy looking and the cakes are fantastic. One of my goals for this summer is to learn how to decorate cakes...we'll see how that goes...I think I will be making lots of practice butter-creame flowers all summer long. I'm also glad you like the shirt I made...you should make some-the pattern is quite easy and the shirt is cute (now I keep buying fabric to make more!!!!). I'll be stopping back soon! Jessica

Priscilla - where did you get the recipe for the levain cc cookies? I've never seen one with all bread flour. the clone I made on my blog uses all purpose. I've made Jacques Torres cc cookies with part bread flour, part pastry flour.
